SMOKED CHICKEN TORTILLA SOUP
INGREDIENTS
1/2 Pound of Edley’s Smoked Chicken, Shredded
2 Cups of Water
4 Cups of Chicken Stock
1 Pack of Artisan Soups - Chicken Tortilla
1 Cup of Sliced Carrots (or other vegetables of choice)
Tortilla Strips
Mexican Blend Cheese
1 Avocado, Sliced
RECIPE
Prepare the base:
In a large pot, combine 2 cups of water and 4 cups of chicken stock.
Turn the heat to medium-high.
Add the vegetables:
Add 1 cup of sliced carrots, or your choice of vegetables, to the pot.
Bring the mixture to a boil
Incorporate the soup mix:
Once boiling, add in the pack of Artisan Soups - Chicken Tortilla Mix.
Let boil for 2-3 minutes.
Add the smoked chicken:
Stir in the shredded smoked chicken.
Cover the pot with a lid and reduce the heat to low.
Let the soup simmer for 10-20 minutes to allow the flavors to combine.
Serve & garnish:
Ladle the soup into bowls.
Garnish each bowl with tortilla strips, a sprinkle of Mexican blend cheese, and a few slices of avocado.
