SMOKED CHICKEN TORTILLA SOUP

INGREDIENTS

  • 1/2 Pound of Edley’s Smoked Chicken, Shredded

  • 2 Cups of Water

  • 4 Cups of Chicken Stock

  • 1 Pack of Artisan Soups - Chicken Tortilla

  • 1 Cup of Sliced Carrots (or other vegetables of choice)

  • Tortilla Strips

  • Mexican Blend Cheese

  • 1 Avocado, Sliced

RECIPE

  • Prepare the base:

    • In a large pot, combine 2 cups of water and 4 cups of chicken stock.

    • Turn the heat to medium-high.

  • Add the vegetables:

    • Add 1 cup of sliced carrots, or your choice of vegetables, to the pot.

    • Bring the mixture to a boil

  • Incorporate the soup mix:

    • Once boiling, add in the pack of Artisan Soups - Chicken Tortilla Mix.

    • Let boil for 2-3 minutes.

  • Add the smoked chicken:

    • Stir in the shredded smoked chicken.

    • Cover the pot with a lid and reduce the heat to low.

    • Let the soup simmer for 10-20 minutes to allow the flavors to combine.

  • Serve & garnish:

    • Ladle the soup into bowls.

    • Garnish each bowl with tortilla strips, a sprinkle of Mexican blend cheese, and a few slices of avocado.
